Xanthan Gum, which is mainly made from starch, is a high molecular weight polysaccharide produced by fermentation with Xanthomonas Campestris under the conditions of special nutrient medium, pH, O2-supply and temperature, then purified, dried and milled into white-like or light-yellow free-flowing powder. The main compositions of Xanthan Gum are D-glucopyranose glucan,D-mannose and D-Glucuronic acid. X-ray determining indicates that Xanthan Gum has a antiparallel double helices conformation, on which its special properties of water solution base.

1. Suspended and emulsification
Xanthan gums have good suspension effect of insoluble solids and oil droplets. 2. Good water solubility
Xanthan gum can quickly dissolved in water, has a good water solubility. Special also can dissolve in cold water, can save multifarious process, easy to use. 5. Thermal stability

Its viscosity reducing only 3%
6.The stability of acid and alkali
Xanthan gum solution is very stable to acid and alkali, make its viscosity between PH 5-10 is not affected, when PH is less than 4 and more than 11, the viscosity changes slightly. Within the scope of the PH3-11, the maximum and the minimum viscosity difference less than 10%. Xanthan gum is soluble in a variety of acid solution, such as 5% sulfuric acid, 5% nitric acid, 5% acetic acid, 10% hydrochloric acid and 25% phosphoric acid. And these xanthan gum acid solutions at normal temperature are quite stable; quality is still not changed for months. Xanthan gum can also dissolve in sodium hydroxide solution, and with thickening properties. The formation of the solution is very stable at normal temperature. Xanthan gum can be strong oxidant, such as perchloric acid, sulfuric acid degradation,With the increase of temperature, the degradation speed raise up.
7.The stability of salt
Xanthan gum solution can miscibility with a lot of salt solution (potassium, sodium, calcium salt, magnesium salt, etc.), the viscosity is not affected. Under the condition of high salt concentration, even in the saturated salt solution is still maintaining its solubility and not settling and flocculation; its viscosity is almost not affected.
8.The stability of the enzyme reaction
